Our last release from Costa Rica is a lovely, washed catuai produced by the Alvarado Fonseca family. We are finding a tropical hard candy sweetness and creamy milk chocolate in the finish. We have been enjoying this, particularly on espresso in our cafe.
The Alvarado Fonseca family started their micro mill in 2015 with the determination to improve and focus solely on specialty coffee. Their main farm, El Salitre is 12 hectares sitting at 1800 MASL.
The Alvarado family is headed by John Alvarado and Katthya Fonseca, founders of the mill and parents of Johnny, Marylin, Eva, Abraham, and Jhoel, their older children Johnny and Marylin, 21 and 20 years old, head this project, collaborating with their father. They are always contributing with new ideas to improve quality year after year
Processing Details:
Cherries are collected at peak ripeness, and mechanically de-pulped to remove as much mucilage as possible, then they are left to ferment overnight in tanks before being dried on raised beds for 12 days.
