Celia Portillo grows Typica and Bourbon on her 4-hectare farm, La Pacaya in the Comayagua Mountain Range. This is a separation of Bourbon grown at 1750 MASL. This is our first time working with Celia's coffee, although she is a relative of Antonio Ramirez who was one of our first partners in Honduras. 

Celia has been working in coffee for many years but it was only 3 years ago that she learned she could process her coffee as specialty to receive a higher price. We are really happy to work with Celia as her coffee was one of the best we tried from Comayagua this season. 
Her Bourbon is a sweetness-focused coffee with flavors of grape, apple, dark chocolate, and whipped cream. 

Processing Details:

Cherries are picked at peak ripeness and then stored in sealed plastic bags in shade for 35 hours. They are then depulped and returned to sealed plastic bags where they undergo a secondary fermentation of an additional 35 hours. Once this time has elapsed, the coffee is rinsed of the mucilage remaining and placed onto raised beds where it’s dried for 22 - 25 days. The coffee is tested for moisture of 10.5% before being removed from the drying
beds and stored in Grainpro bags in a shaded environment.
