It has been exciting tasting and learning more about the flavor profiles coming out of Mexico and what each region has to offer. Coffees from the Sierra Mazateca have been standouts for us for their complex acidity and flavor distinction. This lot is a great example of old-stock Typica and Bourbon that has a citric acidity and flavors of milk chocolate and marshmallow.
Agua Mariposa - translated to butterfly water - is a community in Eloxochitlán. This is a community lot from producers within Agua Mariposa. Each individual lot is so small that separation would be impossible, instead, they are combined to create this high-quality community lot.
