Washed Chiroso
Arnulfo Caro and his wife, Martha Cartagena, manage Hoyo Rico, a 2-hectare farm located in Anzá, Antioquia, at the extreme elevation of 2,100 MASL. Here, with the help of the whole family, they grow Chiroso and Gesha. This is a separation of Chiroso harvested in January 2025. The cup is bright and refreshing, with ripe notes of stone fruit and citrus. We taste peach nectar, lime, and orange, along with florals of vanilla and a lingering finish.
The couple started growing coffee in 2020, harvesting their first crop in 2022. Martha focuses on processing and drying the coffee, as well as raising their young daughter, while Arnulfo and their older children are committed to managing and expanding the farm. It is a true family project. This is our first season tasting their coffee and we are thrilled to begin working with them!
Cherries are picked at peak ripeness and floated to remove defects. The ripe cherries are fermented for three days in open tanks before being depulped. Once depulped, the seeds are submerged in water and fermented for eight days in steel tanks. The seeds are then dried on raised beds made of pine for 2–3 weeks.
