We first met in the Berkshires in 2016, and ever since then, we've found an appreciation for experiencing great things together. Some of the biggest, and most influential events and experiences in our lives have come from our love for great food and coffee.
Lucas has a long background in food service and hospitality. About four years ago he had a cup of coffee that totally changed his life and opened up his eyes to what coffee can be. Most recently, he worked for Share Coffee Roasters where he had the opportunity to learn to roast.
Rebecca is a recent graduate from Mount Holyoke College where she studied Art History and Studio Art. She has a deep love and appreciation for the visual, and is looking forward to applying this passion to her work for Ilse.
We recognize the many steps it takes for coffee to get to us. Our goal is to do as much justice to the process as we can. We feel strongly that everyone in the supply chain should be treated fairly and with respect. It is important for us to know that everyone we are working with is taken care of.
We source coffees that are super clean, sweet and vibrant. We typically look for a more fruit forward cup. Our menu will be intentionally small and seasonal with the goal of building lasting relationships with the producers we work with.
