When our friends at The Coffee Quest sent us over some samples from their competition in Antioquia we were eager to dive in. This coffee, which took 3rd place absolutely blew us away and we immediately bought as much as we could. We have tasted Chiroso a few times, but have never managed to purchase any. It's a really special variety that is mainly grown in a small region within Antioquia. When it's good, it is among some of our favorite coffees. Albeiro Ramirez on his farm Finca El Roble has done an incredible job producing this coffee which is so clean and has so much flavor clarity. We truly feel lucky to be able to roast and share this coffee.
The cup profile of this coffee is very similar to that of a washed Ethiopian. We find a bright citrus acidity along with delicate and complex florals. We get a mix of flavors ranging from mandarin and stone fruit to tropical yellow fruit followed by a really pleasing lingering acidity and sweetness.
