We are so happy to have Colombia back on our menu! Our first offering of the season is an incredible Pink Bourbon from a new producer for us. This coffee showcases everything we love about Pink Bourbon. We taste ripe red fruits, a gummy mouthfeel, and lovely, delicate florals. It's really, really good and a wonderful way to start the Colombian season. 

Processing Details:

Cherries are harvested when ripe and then floated. Cherries are fermented for 30 hours prior to de-pulping. Once de-pulped the parchment is fermented for an additional 40 hours. Once fermentation and washing is complete the parchment is dried on raised beds for 20-25 days.
