As always, it's a pleasure to welcome Gildardo Ortega's Red Caturra back to our menu. Consistently he produces one of our favorite coffees from San Agustin. Finding pure Caturra is becoming harder and harder, and it can produce some of our favorite flavor profiles. Gildardo's coffee has always been a perfect example of this, tasting of juicy yellow tropical fruits with great sweetness. 

In 2021 we tasted Gildardo's coffee for the first time and were blown away by the complexity of the cup. Remarkably, we were his first buyer, and now we buy his whole harvest each season. It's a relationship we are incredibly grateful for and is only possible through the help of our Importing partners at Semilla. 

Gildardo began his life in coffee at the age of 14 when his mother gave him and his brother 800 Caturra trees. For years he was unable to work on his farm as he needed to invest in processing equipment and couldn't take the risk to dive all into processing his coffee. He worked as a picker, and after getting connected with Esnaider Ortega Gomez and his family he learned all about picking ripe cherries and processing. In time, the Ortega Gomez family gave him a small loan so that he could focus on his farm. In his first year, he produced the highest-scoring lot we tasted from the Monkaaba project!

Processing Details:

Cherries are collected every 3 weeks at peak ripeness and are left to ferment in
cherry for 24 hours in a wooden hopper. Once depulped, the seeds undergo a 35
hour dry ferment in tiled tanks. They are rinsed four times to remove all
remaining mucilage and moved to the dryer where they are dried for an average of
20 days, depending on the weather.
