We are very grateful to be able to share Gildardo's coffee yet again this year! Last season, Gildardo's Caturra was among the best coffees we tasted and remarkably he had never sold his coffee out of the country before that. This season his coffee is tasting even better with more structure and refined flavor clarity.
Gildardo is truly an amazing producer. Literally, every single cherry was picked, processed, and dried by him. Generally, farmers will hire pickers to help with the harvest but Gildardo does every single step by himself. He is really motivated to produce the best coffee he can, and the result in this harvest is evidence of that. This coffee is seriously sweet, with flavors of freshly smashed raspberry, dried mango, and sweet cherry juice. We hope you all love this coffee as much as we do! We purchased his entire 4 bag lot-roughly 615 lbs, from his Mitaca harvest and will be also buying from his main harvest.
Cherries are collected every 3 weeks at peak ripeness and are left to ferment in
cherry for 24 hours in a wooden hopper. Once depulped, the seeds undergo a 35
hour dry ferment in tiled tanks. They are rinsed four times to remove all
remaining mucilage and moved to the dryer where they are dried for an average of
20 days, depending on the weather.
