The cup has a zingy acidity, classic Sidra botanicals as well as tropical yellow fruits. We are tasting juniper, ginger tea, pineapple and mango. \u003c\/span\u003e\u003cbr\u003e\u003cspan\u003e\u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eA few years ago Karol planted Gesha and Sidra on a tiny garden plot near her home in San Agustin. She has only been harvesting for a few years now and we are always thrilled to share her work. In addition to her farm, Karol was one of the first employees at the Monkaaba Bodega, where she now leads sample management, analysis, and roasting - playing a crucial role within Monkaaba's organization.  She is also in the process of starting her own roasting business where she will sell roasted coffee to her local community. \u003c\/span\u003e\u003c\/p\u003e\n\u003cp\u003e\u003cspan\u003eCherries are picked at peak ripeness and fermented in a wooden hopper for 12 hours before being depulped. Once depulped, the seeds are dry fermented for 36 hours.
