Around 800 local smallholders, farming at elevations of up to 2,200 MASL, deliver their cherries to the station for processing. This year's lot is exceptional, offering clean, refined fruit with layered complexity and a pointed acidity. In the cup, we find notes of watermelon, ripe peach, lemon-lime, and delicate florals.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eDanche is managed by one of our exporting partners, SNAP. Founded in 2008, SNAP operates multiple washing stations in key areas of Ethiopia. Each year, some of our favorite lots are sourced through SNAP. This season’s washed lot from Danche is a prime example of what we look for in clean, fruited washed coffee. We will also be sharing a honey lot from Danche later this year.\u003c\/span\u003e\u003cbr\u003e\u003cbr\u003e\u003cspan\u003eCherries are collected at peak ripeness. Once floated and sorted, they are depulped, and the seeds undergo dry fermentation for 96 hours.
