Our last release from Ecuador comes to us from the famous Hacienda La Papaya. We have been fans of Juan Pena's coffees for many years and were eager to roast some ourselves.
This season the washed Mejorado from the farm is showing beautifully. Crisp florals and complex flavor is in abundance with a lot of flavor separation. The cup is clean and polished, at first showing notes of melon, pink apple, and florals of honeysuckle and bergamot. It is a elegant cup that continues to build as it cools opening up of notes of stone fruit and citrus.
Processing Details:
Picked at peak ripeness, de-pulped, and wet-fermented for 15 hours. Dried on raised beds for 11 days.
