Fernando Melgar Washed Pache
This iteration of our Primary Espresso comes from Fernando Melgar, a coffee producer in Casillas, Santa Rosa, Guatemala. Fernando manages a total 28 hectares where he grows a range of varieties, including Pache, Gesha and SL-28. This is a separation of Pache grown on his 5 hectare farm, Las Flores at 1850 MASL, harvested in May 2025. Fernando’s coffee is rich and creamy with notes of hazelnut, milk chocolate, grape and plum.
This season we greatly increased our purchasing from the Cafe Colis Resistance community surrounding Mataquescuintla and we are happy to continue our releases with this great coffee from Fernando Melgar. Fernando is one of the larger producers in the group, managing his farm with the help of his son, Allan. Fernando and Allan are active members in the Resistance group, primarily providing economic support to other growers.
Cherries are picked at peak ripeness, floated to remove defects and de-pulped the same day. Once de-pulped the seeds are dry fermented in tile tanks for 30 hours. After this step they are rinsed thoroughly and dried on patios for 12-15 days.
