Washed Chiroso
Jhon Didier Trujillo is a coffee producer in Urrao, Antioquia. His farm, Villa Flor sits at 1950 MASL, spanning 3.5 hectares. This small lot is a separation of Chiroso harvested in November 2025. We have tasted Jhon’s coffee many times, but this marks our first time purchasing his impressive Chiroso. We are finding big flavors, opening up to a cup with citrus, yellow fruits and light brown sugar. The cup cools into notes of orange creamsicle, elderflower and juicy mango.
Jhon is a passionate coffee farmer who has dedicated is life to coffee. He strives to be a role model for the younger generation, hoping to contribute to the further development of his region. On his farm, John grows a number of other crops like banana, lulo and avocado. We are happy to share this small, 150lb lot from Jhon and continue to explore Urrao further.
Cherries were picked at peak ripeness, then fermented in closed tanks for 24 hours. The cherries are then depulped and left to dry ferment in closed tanks for 86 hours. The seeds are then rinsed and dried on raised beds for 2-3 weeks.
