Washed Chiroso
Luis Enrique Cuellar and his brother Robinson manage Finca La Pradera, a 6 hectare farm located at 2050 MASL in Santa Maria, Huila. They grow a range of varieties and this is a separation of Chiroso harvested in August 2025. This is a very juicy and fruit forward expression of Chiroso with notes of orange, blackberry, and tropical fruit like mango along with layered florals of elderflower
Luis, an agronomist by trade, manages both the farm and the sales of their coffee, while his brother Robinson oversees the processing and drying stages. Together, they make an amazing team, each complementing the other's strengths. This is our first offering of Chiroso grown outside of Urrao and we are very excited to see this variety being grown more widely in Colombia.
Cherries are hand-picked at peak ripeness and left to ferment for 24 hours before being floated to remove defects. The cherries are then depulped and fermented for 48-52 hours. The seeds are then washed to remove the mucilage, and dried on raised beds for 18-25 days.
