Washed Sidra
Esnaider Ortgea and his family manage La Esperanza, a farm located at 1750 MASL in La Muralla, San Agustin. This lot is a separation of Sidra, grown in a tiny .25 hectare garden - harvested in December 2024. The focus on quality from this farm is evident in the cup. We taste an array of complex florals and lively flavors, producing an amazing example of Sidra. We find ginger tea, pineapple acidity, honeyed sweetness and lingering botanical notes like juniper.
The history of coffee production in the Ortega-Gómez family spans generations, tracing back to the early days of coffee cultivation in San Agustín. Esnaider gained international recognition during his time as a sample roaster for a Colombian exporter. He now asks that their coffee be recognized as the result of the entire family’s effort—not only his own and his father Don Olgar’s, but also the contributions of his brother Duvan, his mother Lucero, and his sister Lina. Esnaider produces incredible coffee but more importantly he's an amazing, selfless person who works so hard to help others in his community. We are honored to share this coffee and call Esnaider a dear friend.
Cherries are picked at peak ripeness and then floated and hand-selected to remove all immature cherries and then placed on raised beds to drain the excess water. Around 14 hours later, the coffee is de-pulped and dry fermented for 36 hours in oak tanks. The seeds are rinsed four times and drained for 10 hours. The coffee is then dried for 20 days on raised beds in shade.
