Washed Caturra
This espresso roast comes from Esnaider Ortega Gomez, on his families farm, Villa Maria. The farm is in Sevilla, San Agustin sitting at 1750 MASL spanning 5 hectares. This is a separation of Caturra harvested in December of 2023. We find his coffee to be rich and sweet, with a full body. We taste red fruit, dark chocolate and the sweetness of molasses.
Esnaider Ortega Gomez is a incredible coffee producer, and a friend to us at ilse. The Ortega-Gomez family has a rich history in coffee production spanning over sixty years in San Agustin. They grow various varieties, such as Sidra, Tabi, Typica, Yellow and Red Caturra, and Castillo. Their commitment to excellence is evident in the cup. Ontop of being an incredible person and producer, Esnaider is also the founding member of Monkaaba, the producer led initiative in San Agustin where we source majority of our Colombian coffee. He is a humble, kind and deeply altruistic individual.
Cherries are picked every three weeks at peak ripeness. The cherries are floated and then left to ferment in open tanks for 12 hours before being depulped and dry fermented for 36 hours in a tiled tank. The seeds are then rinsed 3 times and left to drain for 15 hours before being dried on raised beds for 20-25 days.
