Bochessa is a community within Arbegona, Sidamo, one of our favorite coffee growing areas in Ethiopia. Here at 2100+ MASL local smallholders deliver their cherries to be processed at this community washing station. This marks our first arrival of the new Ethiopia harvest, grown in December 2024. The cup is elegant and clean with stone fruits and citrus up front and a tea like mouthfeel. We taste peach, florals, lemon zest and honeydew melon.
This washing station, established in 2022, serves 823 smallholder farmers. It emphasizes meticulous cherry selection, fermentation, drying, and strict traceability. Farmers cultivate coffee on small garden plots often as small as 0.1 hectares, more home gardens than full-scale farms.
Cherries are picked at peak ripeness and floated to remove defects. The ripe cherries are then depulped, grade one density sorted, and left to ferment underwater overnight. Following fermentation the seeds are thoroughly rinsed to remove all mucilage and are moved to the drying beds where they dry on raised beds for 12-15 days.
