Honey Ethiopian Landrace
Danche is a washing station in Gedeb, Yirgacheffe, where around 800 local smallholders deliver their cherries. Each farm spans 2-3 hectares and sits at 2,200 MASL. The primary varieties delivered are Kurume and Wolisho. This honey-processed lot is lively and expressive. We find that the honey process intensifies the flavors while maintaining a clean cup. We taste notes of mixed citrus, such as yuzu and mandarin, along with sticky peach nectar and white grape.
Danche is managed by one of our exporting partners, SNAP. Founded in 2008, SNAP operates seven washing stations in key areas of Ethiopia. Each year, some of our favorite lots are sourced through SNAP. Last year, the washed lot from Danche was hands down our favorite coffee of the season. This is our first year with a honey-processed lot from Danche, and we are very pleased with the outcome.
Cherries are collected at peak ripeness. Once floated and sorted, they are depulped, and the seeds undergo dry fermentation for 48-72 hours. The seeds are then dried on raised beds for 10-14 days.
