Habtamu Fikadu Aga is a coffee producer and coffee exporter managing multiple washing stations within Ethiopia. This lot comes from a separation of cherries delivered by 160 smallholder farmers living within the Danche Kebele in Gedeb. The main varieties grown are Kurme and Dega, grown at 1900-2100 MASL. This cup is screaming ripe peach and apricot along with notes of lemon lime, bergamot, melon and white tea. Coffee from Danche always impresses, and this lot is no exception.
Habtamu is doing exciting work, furthering traceability by separating out these town specific lots, allowing us to taste coffee from one specific place. This marks our first year buying coffee from Habatamu and we hope to continue working together and go even deeper with lot traceability.
Cherries are collected at peak ripeness. Once sorted they are depulped and the seeds are submerged in water and fermented for 48-72 hours. The seeds are then fermented in water again for another 12 hours. Following this stage the seeds are rinsed thoroughly and moved to drying tables where they are dried on raised beds for 10-12 days.
