Washed Gesha
This is a beautiful Gesha selection from three producers within the San Martín de Pangoa community. Each farm is situated between 1,800–2,000 MASL, with land sizes ranging from 3 to 5 hectares. This is our first Gesha offering from Peru, and we’re truly impressed by the quality. The cup is clean and dynamic, showcasing the delicate and complex Gesha profile we love. Expect notes of stone fruit and melon, complemented by vanilla cream and layered florals.
Peru is a newer origin for us, and we’re still gaining experience sourcing from this region. However, we’re becoming more familiar with the diverse profiles coming out of the country. This Gesha lot is an exciting example that motivates us to explore more offerings from Peru. The lot is a blend of Gesha from three farms: 60% from Rafael Yoni, 20% from Fernández Castillo Armando, and 20% from Ávila Gabriel.
Cherries are hand picked at peak ripeness and floated to remove defects before being depulped. The seeds are then dry fermented for 15-36 hours in a wooden tank, washed to remove the mucilage and dried on raised beds for 10-13 days.
