Jose Antonio Ramirez Washed Typica
This iteration of our Primary Espresso comes from Jose Antonio Ramirez, a coffee producer in Las Tunas, San Miguel, Guatemala. This is a separation of Typica grown on his farm Rio Colorado at 1750 MASL, harvested in May 2025. Jose’s coffee is rich and flavorful with notes of tootsie roll, grape and plum as well as milk chocolate and almond cream.
This season we greatly increased our purchasing from the Cafe Colis Resistance community surrounding Mataquescuintla and we are happy to continue our releases with this great coffee from Jose Antonio. Jose has been a member of the Resistance group for over 7 years and each season he produces some of the best coffee of the group.
Cherries are picked at peak ripeness, floated to remove defects and de-pulped the same day. Once de-pulped the seeds are dry fermented in tile tanks for 48 hours. After this step they are rinsed thoroughly and placed on raised drying beds where they dry for 21-25 days.
