Decaf Colombia | Monkaaba
This decaffeinated lot is a collaboration among 17 producers within the Monkaaba network. Harvested in December 2023 at altitudes ranging from 1680 to 1900 MASL. It offers a focus on sweetness with a soft and pillowy mouthfeel. Expect flavors of milk chocolate, honey, and marshmallow, complemented by subtle hints of citrus and stone fruit.
We're thrilled to expand our purchasing within Monkaaba to now include our decaf option. While not always the most attention-grabbing offering, this coffee represents our commitment to procuring more volume from our producing partners and embracing a wider range of qualities. This decaf comprises mainly producers with larger farms who historically sold some of their coffee locally. With this Decaf, they can now receive a higher price for their entire harvest.
The process begins with ripe cherries being collected and left to ferment for 15-24 hours before undergoing depulping. The depupled seeds then ferment for 24-32 hours, followed by rinsing, drying, and decaffeination using ethyl acetate.
