Washed Castillo
Fernando and his partner Natalia are young coffee producers in Ricabrisa, Tarqui. Their 1.5 hectare farm El Manzano sits at 1900 MASL where they grow a range of varieties. This is a separation of their Castillo picked between September 1st-5th 2025. The cup is rich and comforting with a profile of creamy nougat and soft purple fruits. We are finding notes of plum, raisin and fig along with a syrupy sweetness and subtle notes of mint.
The Monkaaba project, which began in San Agustín, has expanded into neighboring communities such as Tarqui. This is an exciting coffee-growing region of Colombia where we don't source coffee as often, making these lots especially rewarding to share. It has been a few years since we last purchased coffee from Fernando and Natalia, and we're thrilled to showcase their coffee once again.
Cherries are picked at peak ripeness and fermented in cherry for 36 hours. The cherries are then depulped and left to dry ferment for 48 hours. The seeds are washed and moved to raised drying beds.
