Washed Chiroso
Jose Londoño runs Finca Santa Marta, a 2-hectare farm located in Urrao, Antioquia. Here at 1850 MASL he has 2,700 Chiroso trees with 1,800 more on the way. This is a separation of his Chiroso harvested in February 2026. The cup is clean and delicate up front with notes of kiwi, melon, and tropical fruits. As it cools, we find riper notes of watermelon and papaya.
Jose purchased Finca Santa Marta four years ago after working on an avocado farm to save enough money for this new venture. He now lives on the farm and manages every aspect of production himself. He has fully committed himself to quality, focusing exclusively on cultivating Chiroso. This is our first time tasting his coffee and we look forward to seeing where his farm goes from here.
Cherries are picked at peak ripeness and depulped the next day. The seeds are then fermented in tile tanks with water for three days before being washed and dried for 8-12 days.
