Washed Sidra
Karol Ortega & Diego Leguizamo are the husband and wife team behind the farm La Hormiga in San Agustin. The two are an inspiring young couple with a beautiful family. This is a separation of Sidra grown on a small .5 hectare plot at 1900-2000 MASL. The cup is delicate and very clean with a tea like mouthfeel and notes of mixed botanicals like juniper, ginger tea, apple and apricot.
Diego and Karol both come from rich coffee-growing histories. Diego’s father, Arnulfo, is a past Cup of Excellence winner, and just last year, Diego and Karol began selling coffee under their own name. Both are founding members of the Monkaaba group, having provided early financial support to help launch the project. Karol was one of the first employees at the Monkaaba Bodega, where she now leads sample management, analysis, and roasting. They are an incredible young couple, and we’re proud to partner with them.
Cherries are picked at peak ripeness and fermented in a wooden hopper for 12 hours before being depulped. Once depulped, the seeds are dry fermented for 36 hours. The seeds are then washed four times to remove the mucilage, drained for 6 hours and then moved to raised beds where they dry for 18 days.
