Washed Pink Bourbon
Silvia Ordonez manages the small farm El Cascajal, located in Las Chinas, San Agustin. Her farm is a mere .25 hectares where she grows Pink Bourbon & Caturra. This is a separation of her Pink Bourbon harvested from November 17th-20th 2025. The cup is round and sweet with notes of plum, blood orange, grape and brown sugar.
We first met Silvia in 2023 during our first visit to Colombia. She was only 19 then, and had just started her farm with the help of her father. We were struck by her determination and commitment to learn more about coffee production. It's very special to grow alongside her and now be able to work with her coffee.
Cherries are collected every 15 days and transported by horseback to the beneficio. The cherries are floated and left in a tiled hopper for 24 hours. The following day’s collection is added, and the two-day batch is depulped together. The seeds then undergo a 32-hour dry fermentation in tiled tanks, followed by rinsing and 12 hours of draining. Finally, they are moved to dryers for an 18- to 20-day drying phase.
