This is our 3rd year working with Ivan and his Gesha. Each season we look forward to sharing Ivans coffee, it's become a treat for us to roast and brew coffees of this caliber. His dedication to quality shows in the cup as he consistently produces beautiful, complex coffees. This season's Gesha is very flavorful and floral.
Expect a complex cup opening up to aromas of honeysuckle, mango, and stone fruits. We find a clean profile of tropical fruits, florals of elderflower, and a long candy finish.
This season we also purchased Ivans Washed SL-28 which we will be releasing later this season!
About Ivan:
While Ivan's farm La Esmerelda only started producing cherries a few seasons ago, he is no stranger to coffee. Coming from a long producing background and many years running the Montanas del Diamante Mill with his siblings. In 2016 Ivan decided to sell his portion of the business in order to enjoy his elder years and to focus on producing some of the highest quality coffee possible at a small scale. He purchased some land in an up-and-coming area now known for producing some of the best coffees in Costa Rica. They began immediately planting exotic varieties like Gesha and SL-28 and started building a small wet mill and drying area which was completed in time for the 2021 harvest. Ivan's dream and vision were met that first year after winning 1st place in Costa Rica's Cup of Excellence competition! We are so excited to see what the future holds for Ivan and feel really lucky to work with his coffee.
La Esmeralda is located in an area called Quebrada Grande; just East of Santa Maria and even closer to the village of Copey. As recently as 5 or 10 years ago coffee couldn’t be grown in this area, because it was too cold. As climate has been changing and Copey got warmer some brave farmers started experimenting with planting coffee in the area - specifically East African Varieties. Ivan noticed it really early on, but today the cool and higher altitudes of Santa Maria and Copey have shown to be a perfect host to varieties, winning most of the recent Cup of Excellence in Costa Rica. Ivan made sure to source good seedlings to plant and trusted the renowned producer Tono Barrantes of Herbazu in the West Valley to supply him with the best.
Processing Details:
This honey processed coffee began with a meticulous collection of ripe cherries, then passed through a floating system before being pulped. The parchment is left with all of its mucilage intact. It is placed on raised drying beds inside of their green house and put in little mounds until the next day. Then, the coffee is spread out and moved frequently. The honey process takes longer to dry and can require 3 weeks until it is fully ready to be stored away. When it is complete, the color of the parchment is a dark reddish, orange and is quite sticky to the touch.
