Washed Mejorado
This coffee comes from the father and son team, Jose and Pepe Jijon. Their newer farm, Fincas Del Putushio is an exciting new project in Ecuador's southern region of Loja. This lot is a separation of Mejorado grown at 2222 MASL, harvested in June 2026. This is a pristine expression of the Mejorado variety with great flavor clarity and structure. The cup is crisp and refined with notes of white flower, green apple, white nectarine and lingering peach. The acidity is high and well balanced with layers of florals. This is a beautiful coffee.
This is our fourth year working with Pepe, and it's a joy to have his coffee back on our menu. Pepe and his son Jose are deeply passionate about coffee and equally committed to the planet, practicing biodynamic and organic farming that works in harmony with the earth. Each lot of their coffee is unique, reflecting the time, place, and the many hands involved in its careful processing. At this new farm in Putushio the focus is on producing extraordinary washed coffees that showcase both varietal and terroir.
Cherries are picked at peak ripeness and depulped the same day. The seeds are then washed thoroughly with spring water and then sent to dry on shaded raised beds for 30 days.
