Washed Ethiopian Landrace
Eliyas Dukamo and Atiklit Dejene both come from long histories in coffee production. Eliyas being a member of the Dukamo family who founded Daye Bensa while Mimi came from the QC team of Gesha Village. Their new venture is focused on the production of high-quality and competition-grade microlots using industry best practices. The word "Elto" has a dual meaning in Sidama meaning both "abundance" and "more than passion," summarizing the couple's intention for their enterprise.
Cherries are collected at peak ripeness. Once sorted they are depulped and the seeds are submerged in water and fermented for 48-72 hours. Following this stage the seeds are rinsed thoroughly and moved to drying tables where they are dried on raised beds for 10-12 days.
