Ethiopia | Keramo
Washed Ethiopian Landrace
This coffee comes from one of our favorite sites, Keramo, located at extreme elevations of up to 2350 MASL in the Bombe mountain range. About 1500 smallholder producers contribute their cherry to create this lot, with the primary variety being Heirloom 74112. Expect a complex and crisp cup with pointed acidity and structured florality. We find notes of pink lemonade, melon, and peach, along with jasmine and honeysuckle florals.
Keramo is managed by Asefa Dukamo Korma of Daye Bensa, who are also the exporters for this and many of our other lots from Sidama. They gained global recognition after placing 2nd and 3rd in the inaugural Ethiopian Cup of Excellence in 2020. Coffee here is grown at some of the highest elevations in the world, producing some of our favorite flavor profile
Cherries are collected at peak ripeness. Once sorted they are depulped and the seeds are submerged in water and fermented for 36-72 hours. Following this stage the seeds are rinsed thoroughly and moved to drying tables where they are dried on raised beds for 12-15 days
