Ethiopia | Tima
Washed Ethiopian Landrace
This coffee comes from Ture Waji, the founder of Sookoo Coffee. It is processed at the Weessi station, where cherries are gathered from local smallholders from the Tima sub-kebele. Farm elevations range from 2000 to 2150 MASL and this particular lot primarily consists of Gibirinna 74110 and Serto 74112 landrace varieties. Expect a clean cup that beautifully encapsulates the terroir of Guji. You'll find delightful notes of honeydew, citrus, peach and florals of jasmine and fresh hops.
Ture Waji, often referred to as "The King of Guji," is not only a great producer but also a passionate, kind individual we've had the pleasure of meeting numerous times over the years. He is renowned for consistently producing some of the nation's cleanest naturals. This washed lot is a testament to his expertise, marking his second season of producing washed coffee. Stay tuned for a forthcoming release of a few natural lots from Ture.
Cherries are collected at peak ripeness. Once sorted they are pulped using a Penagos eco-pulper. The seeds are then submerged in water and fermented for 12 hours. Following this stage the seeds are rinsed thoroughly and moved to drying tables where they are dried on raised beds.
