Ethiopia | Yukro Espresso
Washed Ethiopian Landrace
This coffee is sourced from the Yurko washing station in the village of Wanja
Kersa in Agaro. At elevations between 1800-2200 MASL 479 smallholder
farmers deliver cherry to contribute to this lot. This is a sweetness and fruit
forward espresso offering with flavors of stone fruit reminding us of apricot
and citrus marmalade.
Each year we purchase coffee from the Western side of Ethiopia. Here, harvest is earlier than most areas and they typically are the first coffees to land. We also find that these coffees peak over time and often taste best far off harvest. This is our first year working with the Yukro station.
Cherries are collected at peak ripeness. Once sorted they are mechanically
depulped and the seeds are submerged in water and fermented overnight.
Following this stage the seeds are rinsed thoroughly and moved to drying
tables where they are dried on raised beds for 6-8 days.
